Southern my Brother,

This past week I tried something I've never done before! I turned a 10 LB pork belly into bacon! Took 8 days curing and 3 1/2 hours of smoking but holy crap is it amazing!!! Was actually a pretty easy process! Don't think I'll ever eat store bought bacon gain!!

Navy, there's nothing better than homemade bacon.  Over the years I've raised a few hogs and steers for butchering and there's nothing better.......unless its venison.  I noticed years ago the marked difference it made in my overall health when we stopped eating store bought meats and raised our own.

Fall is on the way up here, the red maples are starting to change colors and drop their leaves already.  We'll probably get our first frost in about three weeks or so!!

Man that sounds good navylion. I need to check out these other places to post. I’ve never looked here before lol. You have fun buddy, I wish I had a run down there I would’ve loved to meet up and bought you lunch. Hopefully we’ll get a game or Race soon my friend.

Depends on what I am smoking. For the bacon this time I used hickory, sometimes maple. I also use cherry, apple, mesquite and alder depending on what I am doing. Mesquite for my brisket. If I do smoked chicken or chicken wings I use cherry or apple, salmon I use the alder/
